Coconut Ginger Ice Cream

adapted from the Big Chill ice cream maker
  • ¾ cup coconut milk
  • ¾ cup light whipping cream
  • ¼ cup sugar
  • 1 egg
  • 1 inch piece of ginger, chopped finely
  • ½ tsp vanilla
  1. In a bowl, whisk together the egg and sugar until light then add the coconut milk, cream, ginger and vanilla. Continue whisking until well blended.
  2. Refrigerate for at least 2 hours.
  3. Pour mixture into your ice cream maker and follow the directions according to your manufacterers instructions.
  4. Once ice cream is made, add the ice cream to a container and freeze.
  5. Scoop into a bowl and enjoy on its own or mix in shredded coconut or chopped raw almonds for a nice crunch.
