Prickly Pear Margarita for Valentine’s Day

Seriously, I’ve just had it with all this snow. We were hit with another 11 inches of snow yesterday and I’ve yet to move my car since last weeks storm! My wheels just kept spinning in the ice so just shook my little fists up in the air left it there. There’s also supposed to be another storm coming tomorrow but I’m not letting it put a damper on my evening plans. After shoveling for the umpteenth time I just wanted a strong, spicy drink and pretend I was on a beach somewhere. I thought this prickly pear margarita for Valentine’s Day was fitting…

Have you ever handled a prickly pear? These semi-tart fruits grow on nopales, the flat cactus shown below. They look deadly but inside they’re a gorgeous fuchsia color and mildly sweet. You have to seriously watch how you handle the fruit however, they call it prickly for good reason. The fruit has these tiny spines that can easily pierce the skin which I learned very quickly. I’d suggest wearing thick gloves or holding them from both ends.

Prickly Pear Margarita for Valentine's Day

Ingredients
  • 3-4 prickly pears, skin removed, quartered
  • 1 cup 100% agave tequila
  • 1 jalapeno, sliced
  • ½ cup triple sec
  • 2 limes, juiced
  • tajin
Instructions
  1. Pour tequila into a cup then add the sliced jalapeno. Let sit for at least 1 hour or infuse the tequila with jalapeno overnight.
  2. Blend the prickly pear in a blender with a little water. Strain juice in a separate container to remove seeds. Set juice aside.
  3. Fill ½ of pitcher with ice, add tequila, about ½ cup of prickly pear juice, triple sec, lime juice and stir vigorously. Taste and adjust with triple sec for a little sweetness, if needed.
  4. To serve, rim glass tumblers with tajin chile spice and fill with the cocktail.

Granola Pancakes with Spicy Cherry Compote

I made these amazing granola pancakes with spicy cherry compote this past weekend. These are not your fancy pants homemade pancakes but the good ol’ trusty Bisquick kind! I truly wanted to make some from scratch after seeing this healthier homemade version from the Whole Grain Mornings cookbook on Smitten Kitchen but decided on convenience. I don’t make pancakes that often so that yellow container you easily spot down the pancakes aisle was just too tempting. Besides, I made the spicy cherry compote from scratch and added healthy granola to the mix for some added nutrition.

I don’t really like sweets early in the morning but this would be great for brunch. Wouldn’t you want to wake up to this on Valentine’s Day after you’ve slept in and rolled out of bed? The spicy cherry compote will add some extra heat to your day and the a scoop or two of  KIND healthy grains clusters will keep you full for a while. You can add your own granola but these clusters contain flax seeds, quinoa, oats for a bit of crunch and wholesomeness.

I think I’m making these again. Sweet, sour, hot cherries would also be great on ice cream or oatmeal. Hope you have a wonderful week!

Granola Pancakes with Spicy Cherry Compote

Ingredients
  • 5.1 oz container Bisquick
  • ¼ cup KIND healthy grain clusters
  • ½ lb cherries
  • ⅓ cup water
  • 1 small jalapeno, sliced
  • 1 lemon, juiced
  • 1 tbsp sugar
  • ½ tsp cinnamon
  • maple syrup
Instructions
  1. Crush the cherries and remove the pits. Add to a saucepan on medium heat then add the water, jalapeno, lemon, sugar and cinnamon and stir until well mixed.
  2. Let mixture come to a boil and cook down liquid until syrup thickens. Remove from heat, then remove and discard the jalapenos.
  3. Make pancakes according to instructions on container but stir in the granola before pouring.
  4. Serve pancakes with syrup and top with cherry compote.

 

Spicy Hot Cherry Chocolate Martini for your Valentine

Happy Valentine’s Day! Hope you are all having a super spicy hot day today and if not don’t sweat it, you will be after this spicy martini. It’s sweet, spicy and chocolatey with a touch of cherry. Perfect if you’re making it a girls night in or if you’re with your loved one.

Spicy Hot Cherry Chocolate Martini
1 serving

2 oz jalapeno infused Vodka
1 1/2 oz Godiva Chocolate Liquor
1 oz light cream
1/2 oz triple sec
1 tsp maraschino cherry juice
1 maraschino cherry

Add ice to a martini mixer, then add the rest of the ingredients except for the cherry and shake it hard. Pour into a chilled martini glass.

New Lollipop Flavor just for Valentine’s Day

Hi all, been working on a new lollipop flavor for Valentine’s Day that I think you all will love! Cinnamon Spice lollipops have a nice spice flavor and come with a little cinnamon candy heart. The lollipops are made with cinnamon sticks and hot, spicy cinnamon candy which also give them their lovely pink color. Happy Valentine’s Day

There used to be a time when I hated Valentine’s Day, yes really hated it. Surely because my high expectations for that day left me disappointed for some reason or another but mostly because it’s so commercialized and shoved in our faces soon after the new year. All the roses, chocolate boxed hearts and the reds and pinks that line the store aisles can get a little nauseating. To me it’s so much more meaningful to spend quality time with your partner or friends and instead of spending incredible amounts of money trying to impress them, impress them with a homemade dinner, a little hand written note and if you want to give a gift, give something handmade and get crafty wrapping it. Just the thought of someone taking the time to make something with their own hands or even buying something handmade is so heart warming.
