Keto Cheesesteak Stuffed Peppers

I recently started my 28 days Keto program and have been scouring the web for healthy recipes. Two weeks into the program and I’m craving all the bread! All I want to do is eat pizza, French bread with butter, spicy dumplings, ahem, you get it, but I’ve been losing weight! I saw a photo of Keto cheesesteak stuffed peppers and knew I had to make it right away! Seeing that recipe reminded me of my trips to Philadelphia years ago for the best cheesesteak sandwiches I’ve ever had. These Keto cheesesteak stuffed peppers satisfied that craving and turned out so good they’ll be on repeat in this household!

This is a spicy recipe because we can’t have bland foods on Hot Lollies. πŸ™‚ It’s also made with love using Adobo, the seasoning on every Latina’s spice rack! If you don’t have Goya Adobo, get yourself a bottle or make your own like I did here. The Keto diet is tough; it’s such a departure from how I normally eat and consuming so much fat has me a bit concerned. I do love that I’ve been cooking more and losing weight but all that fat over a long period of time couldn’t possibly be good for you, right? What’s your experience with Keto? I’m going the “clean keto” route and adding more green veggies and leaner meats. This recipe was a special treat for me since it’s been six months since I had beef!

I’m going to stick with the program for the 28 days but will most likely switch to the Whole30 program once it’s all over. I need more carbs in my life but right now, this Keto cheese steak stuffed peppers has my name all over it! What’s your favorite Keto recipe? Keto Cheesesteak Stuffed Peppers

Ingredients

  • 1 lb Sirloin Beef strips
  • 1 Med Yellow Onion
  • 2 Med Green Peppers
  • 1/2 cup Shredded White Cheddar
  • 1/2 cup Shredded Mozzarella cheese
  • 1/2 Habanero pepper
  • 1 2 tsp Adobo
  • 1/2 tsp cracked black pepper
  • 1 tbsp Olive oil

Instructions

  • Preheat oven to 400 degrees. Heat olive oil in saute pan and saute chopped onions until translucent. Set aside.
  • Season the steak in a bowl with the Adobo and cracked pepper. In same pan, add a tbsp of olive oil and add the sirloin beef strips. Cooks steak strips until nicely browned and cooked through, about 10-15 min.
  • While steak is cooking, cut the tops off the green peppers and scoop out all the inside seeds and ribbing.
  • A few minutes before steak is done, add the cooked onions back into pan and stir. Add the habanero peppers and cover until steak is done.
  • Grease a baking sheet and stuff the peppers with equal amounts of steak and onions. Mix both cheddar and mozzarella cheese and add equal amounts of cheese to each of the stuffed peppers.
  • Place stuffed peppers on pan and bake for 15-20 minutes in preheated oven until cheese melts and peppers have crisped edges and are a little soft. Carefully remove from oven and enjoy.

Notes

Tips:Β 
For a more spicy cheesesteak, use the entire habanero pepper. Also, if peppers aren’t staying upright when placing on baking sheet, make a ring using aluminum foil and place pepper on top so it doesn’t spill over.Β
